Recipe

INGREDIENTS
  • For chicken stew:

    • 2 tbsp coriander seeds, roasted
    • 2 tbsp cumin seeds, roasted
    • 5-6 black peppercorns
    • 2-3 cinnamon sticks
    • 2 cloves
    • 1 tbsp garlic, chopped
    • 1 tbsp ginger, chopped
    • 10-12 curry leaves
    • 2-3 tbsp oil
    • 1 cup onion, sliced
    • 5-6 curry leaves
    • ½ kg chicken
    • 2 tbsp ginger, juliennes
    • ½ cup potatoes, chopped
    • Salt to taste
    • 3 cups coconut milk

  • For Malabari paratha:

    • 1 cup Refined flour
    • 2 tbsp sugar
    • Salt to taste
    • 2 tbsp baking powder
    • 1 tbsp ghee
    • Water as required
    • 1-2 tsp ghee
    • Ghee as required
PREPARATION
  1. In a mixer grinder, add coriander seeds, cumin seeds, black peppercorns, cinnamon sticks, cloves, chopped garlic, chopped ginger, curry leaves. Blend it well.
  2. In a pan add oil, sliced onions, blended masala mixture, curry leaves, chicken pieces and ginger juliennes. Sauté it and add chopped potatoes, salt, and coconut milk. Take out some potatoes, mash them and return to the stew. Cook it well and add fresh coconut milk. Switch off the gas as we do not overcook the stew
  3. To make Malabari paratha dough: In a bowl, add refined flour, sugar salt, baking powder, ghee and add water to a small dough. Roll it into a ball and spread ghee on it and let it rest.
  4. Roll the dough into a thin paratha spread ghee on it and arrange it like fan, twirl it into a wheel-like disc and roll the paratha.
  5. On a pan, carefully place the paratha and generously apply ghee to roast it on both sides.
  6. Malabari paratha with chicken stew is ready to be served.
