Recipe

INGREDIENTS
  • For marinade:

    • 750 gm mutton
    • 1 tsp cumin-coriander powder
    • ½ tsp turmeric powder
    • 1 tsp red chilli powder
    • 2 tbsp Yogurt
    • Salt to taste
    • 1 tbsp mustard oil
  • For biryani:

    • 2 tbsp oil
    • 1 cinnamon stick
    • 2 star anise
    • 1 cup brown masala
    • Water as required
    • 2 cup basmati rice, 80% cooked
    • Onions as required, fried
    • 2 potatoes, boiled
    • 2 eggs, boiled
    • ½ tsp saffron
    • 2-3 mint sprigs
    • 10-12 drops screwpine essence
  • For garnish:

    • banana leaf
    • Coriander sprigs
    • Onion rings
PREPARATION
  1. Marinate the mutton with curd,turmeric powder red chilli powder, cumin-coriander powder, salt and leave for sometime.
  2. Heat oil in a handi, add whole spices and brown masala. Add the marinated mutton and water for little gravy. Cook for 45-50 minutes.
  3. Cook rice up to 80% and add the first layer of rice on top of the mutton in a handi. Add boiled potatoes, boiled eggs and fried onions. Add saffron and then another layer of rice coated with fried onions and saffron.
  4. Close the pot and cook for 15 minutes.
  5. Serve with chopped coriander and mint sprigs and onion rings.
